Situated on the bustling Powell St. artery into downtown, the fiercely Vancouver, seasonally driven philosophy is obsessed upon at The Pie Shoppe. The sister’s find themselves driving out to the lush valley and Okanagan desert almost weekly during the sweltering summer months in search for perfect tree ripened fruit. The best this province has to offer. Each trip compelled to cram every inch of treasure into their little 30 yr old B2500 Mazda pick-up with sweet gems of raspberries, late June blueberries, thorn picked blackberries, and honey kissed apricots, nectarines, peaches and dozens of varieties of plums, apples, and pears.
The pie is so simple at the shoppe, using locally milled organic flours, butter and H2O for the pastry, a few free-range eggs, cream, sugar and spice for custard, and a little seasonal fruit macerated in a zest of citrus and pinch of sweetness. No bucket or cans of pre-processed filling or dough sheeter in sight. All bespoke handmade pies daily for the offering.
While the pie menu is focuses on a seasonal menu and strictly based on supporting British Columbia produce sourced from treasured suppliers. The pies themselves take on a wanderlust from the girl’s Southern Ontario childhood, and much of their early twenties traveling and cooking in Britain, Asian, Australia, India and South America. The spices, herbs and techniques often mimic those memories with generous notes of cardamom, cumin, citrus, ginger, and chilli. Not often found in a pie profile.
The coffee program extends on a similar focus, with a seasonally rotating coffee selection from green coffee suppliers showcasing individual stories from growers such as beans from Costa Rica, sourced from an all women’s founded Co-op, to the origins of an Ethiopian bean particularly favoured for it being a tree dried fruit, with properties bearing notes of blueberry, vanilla and chocolate.
